Breakfast in Bed —Spelt Pancakes Recipe

    Celebrate with the ultimate breakfast-in-bed recipe — our incredibly delicious spelt buttermilk Manuka honey pancakes.

    You will need:

    • 1 cup of spelt flour
    • 1 cup of buttermilk
    • 1 tsp of Biosota Organics Manuka honey plus 1 tbsp extra for drizzle
    • 1/2 tsp vanilla extract
    • 1 egg
    • 1 tbsp melted butter
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt

    Using a small whisk, beat the egg in a mixing bowl until consistent in colour. Add buttermilk, Manuka honey, melted butter and vanilla extract. Set aside.

    In a separate bowl, sift spelt flour, baking powder and baking soda. Mix dry ingredients into the bowl with wet ingredients until combined. Don't overdo it. If the mixture seems thick, add a few tablespoons of water until you reach the right consistency.

    Heat a lightly buttered skillet over medium-high heat. Drop 1/4 cup batter into the skillet and cook until bubbles begin to form 1 to 2 minutes.
    Flip and cook until browned on the other side. Repeat with the remaining batter. Serve warm with your Mum's favourite fruit, yogurt and Biosota's organic Manuka honey. Or, try topping it with one of our delicious Manuka honey superfoods spreads.
