Ingredients

  • 3-4 medium carrots
  • 1/4 cup dried cranberries
  • 2 cloves garlic, minced
  • 1/4 cup chickpeas (optional)
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pickled red onions or fresh (use your Manuka Honey pickled version)
  • 2 tbsp sesame seeds
  • Fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar

  •  Salt and pepper to taste

Method

1: Use a vegetable peeler to shave the carrots into long, thin ribbons. Work along the length of the carrot and rotate as you go. Place the ribbons directly into a large salad bowl.

2: Add the cranberries, garlic, chickpeas (if using), feta, pickled onions, sesame seeds and fresh parsley to the bowl.
